THESE RECIPES ALL ADD UP INTO ONE DESSERT THAT I MADE IN A CULINARY COMPETITION AND ON TELEVISION. I WOULD HAVE WON HAD ANOTHER TOWN'S HIGH SCHOOL TEAM NOT STOLEN MY RECIPE..
HONEY TEA CAKES 2/3 cups of honey 1/3 cup of vegetable oil 1/4 cup of milk 1 egg 1 1/2 cups of all purpose flour 2 bags of orange pekoe cut herbal tea or any type of tea you'd prefer 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt chopped up strawberries mint leaves
1. mix all dry ingredients (flour, salt, b. powder, b. soda, and tea) in a big mixing bowl. 2.In another bowl, combine the honey, milk,vegetable oil, and egg. 3. Mix in the wet ingredients into the dry ingredients. 4. Once mixed thoroughly, pour the mixture into small; greased souffle' bowls. 5. Bake at 350 degrees for 40 minutes or until golden brown and not gooey in middle. 6. Put 2 strawberry halves and a mint leaf on top of the cakes
POACHED PEARS 2 pears (bartlett or Danjou) 4 cups of red wine *NOTE: Cooking the wine removes the alcohol 3 cinnamon sticks chopped in half 3 whole cloves 1 slice of nutmeg 1 cup of honey strawberry halves
1. Peal and core the pears and cut them in halves 2. Combine all ingredients into a pot (copper bottom pot is best). 3. cover the pot and cook on medium high heat for 30 or less minutes. Just enough until the pears can be slightly cut by a spoon but aren't too soft or too hard. *NOTE: Covering the pears will make the mixture boil over so watch out!! 4. Once done, put pear halves under cakes and drizzle wine mixture on top of the cakes and put strawberry halves between the pear halves.
FRUIT COMPOTE SAUCE 1 1/4 cups of honey 1 cup of orange juice 2 cinnamon sticks chopped in half 1/2 teaspoon of whole cloves 2 cups of fresh strawberries 1 slice of fresh whole nutmeg 1/2 cup of sugar
1. Combine all ingredients into a sauce pan and bring to a boil over medium high heat. 2. Sauce is done when it's dark red in color. 3. set up a bowl with a strainer over the top and pour the mixture into it. With a ladle, squeeze the mixture through the strainer. But do not let in any of the whole spices or seeds. 4. Once done straining, pour the mixture over the cakes and around the cakes.
