Yummy recipe! If you like Sweet and Sour stuff, this will probably tickle your fancy. I got it out of Reminisce Magazine, Aug-sept. 2006.
1/2 pound ground lean beef (any other meat substitutes in well)
1 medium onion, halved and sliced
1/3 c. sliced celery
1/3 c. green pepper (yellow and red are good too)
1 garlic clove, minced
2 teaspoons butter
1 8oz can unsweetened pineapple chunks
1/4 c packed brown sugar
1 tablespoon flour
1 tablespoon white wine vinegar (found by the cooking wines)
1/4 teaspoon salt
1 c. hot cooked rice.
In a small skillet, brown beef. Drain and set aside.
In same skillet place butter and saute the following until crisp/tender(about 5 mins): onion, celery, pepper and garlic.
While that is sauteing, drain pineapple, reserving the juice and set aside the pineapple chunks. Add enough water to the juice to measure 1/2 c. In a bowl combine these ingredients, mixing until smooth: brown sugar, flour, vinegar, salt and juice. Add this to skillet after veggies are crisp/tender.
Bring to boil, stirring occasionally cook for 2 minutes over medium heat. Add beef and pineapple; heat through.
Serve over rice, makes two servings.
Other options: feel free to add any other veggies that sound good to you, I've tried carrots and those worked great. Also, this recipe is easy to double or triple so don't feel limited by the serving size.
