Recipe I was given. Must try!
3/4 cup sugar
1/8 tsp salt
1 tbsp flour
1 1/4 cups grated pineapple (which is FUN to do, let me tell you!!)
1 tbsp melted butter
3 eggs, separated
4 tbsp sugar (separate, for the meringue)
1 pie crust (I suck at making my own, so I buy them ... )
Mix sugar, salt and flour together, then add to pineapple.
Add melted butter. Separate eggs and beat yolks until light and creamy, then combine with pineapple mix.
Prepare pie pan with uncooked pie crust. Pour mixture into crust.
Bake in pre-heated oven at 425 for 10 minutes, then lower to 350 and continue baking for about 35 minutes or until pie is firm in center.
Meringue - beat egg white until stiff, then slowly add sugar. Spread meringue over pie when done baking, then return to oven (325) for about 10 minutes to brown meringue.
